Would you believe me if I tell you there is a snack that cools the hot days, won’t take you long to make and is a healthy nutritious boost? This is the ultimate treat for the summer that looks like a watermelon but has much more in it! Here is the divine recipe:
Vegan “Watermelon” Popsicles:
Green layer: 1/2 cup fresh spinach leaves (packed), 1 cup of grapes, 1/2 cup apple juice, a few mint leaves.
Red layer: 1 cup of fresh strawberries/watermelon (or a different red fruit), 1 cup fresh pineapple juice, 2 tablespoons lime juice.
Optional for making layers sweeter: 2 tablespoons agave nectar/maple syrup.
How to make it:
Simply blend each layer’s ingredients together in a blender and strain them to remove seeds. Pour the red mixture into popsicle molds (trays) or reusable cups, until they’re 3/4 full. Freeze for about 2 hours. Fill the rest with the green mixture, add sticks and freeze for 4 hours. My recommendation: put a few small fruit cubes in the popsicles to make them even more interesting 😊
