Stellar Strawberry Salad
INGREDIENTS
Salad:
4-6 cups baby spinach or gourmet mixed greens (800-1000g)
1 ½ cups strawberries, hulled and sliced (250g)
1 mango, peeled and cut into bite-sized cubes
½ large red onion, thinly sliced
½ cup dried cranberries (60g)
½ cup slivered almonds, lightly toasted in 1 tablespoon safflower oil (55g)
Dressing:
¼ cup granulated sugar (50g) . cup organic safflower oil (80ml) 3 tablespoons balsamic vinegar (45ml) ½ teaspoon salt
METHOD
1 Toast the almonds in the oven with a tiny bit of oil, until golden, and set aside to cool.
2 In a large bowl, combine the spinach or salad greens, strawberries, mango and red onion.
3 Combine the sugar, safflower oil, vinegar and salt in a jar or tightly sealed container and
shake well.
4 Add dressing, nuts and dried cranberries to the other ingredients just before serving.
5 Toss to combine.
6 Serve chilled.
